Did you know?
In the region, people also speak of “sirop de Herve” or pear and apple syrup: it is the same speciality, born in the orchards of the Pays de Herve (Herve region). Each syrup maker keeps its own recipe, sweeter or richer to a greater or lesser degree. For inspiration in the kitchen, the syrup works offers on its website a recipe for boulets à la liégeoise with syrup (in French), along with ideas for desserts and accompaniments.
Siroperie Meurens, in Aubel since 1902
Clément Meurens founded his syrup works in 1902, near Aubel railway station, to stay close to the orchards of the Pays de Herve. Vrai Sirop de Liège, a trademark registered in 1947, became the company’s flagship product. The fruit is pressed, then the juices are concentrated before being put into jars.
